What is Kale?
Kale, also known as Borecole, is one of the healthiest vegetables on the planet. Its leafy green, also available in curly, ornamental, or dinosaur varieties. Kale is part of the Brassica family that includes cabbage, collards, broccoli, and Brussels sprouts.
Why is Kale considered the "Super Vegetable"?
Kale is a nutritional powerhouse, one cup of chopped kale contains @ 33 calories, 206% of Vitamin A, 134% of Vitamin C, and 684% of Vitamin K. Its also a great source of minerals copper, potassium, iron, manganese, and phosphorous.
The whopping 684% of Vitamin K is necessary for a wide variety of bodily functions, like normal blood clotting, antioxidant activity, and bone health. According to WebMD, kale helps lower blood cholesterol levels and reduce the rick of heart disease, especially when kale is cooked raw. Kale is also rich in eye health promoting lutein and zeakanthin compounds.
The Benefits of Eating Kale
Kale is low in calories, high in fiber and has zero fat. Its high in iron and Vitamin K. Kale is filled with powerful antioxidants and its great for cardiovascular support. Kale is high on Vitamin A, C, and calcium. Kale is also a great detox food.

Kale is very high on Vitamin K, this may pose problems on some people, WebMD advises we consult our doctor before consuming kale. Also, it contains oxalates, naturally occurring substances that interfere with the absorption of calcium, according to WebMD, avoid eating calcium rich foods like dairy at the same time as kale to prevent problems.
Why I Love Kale
My girlfriend and I are very much into eating healthy and what I do with the kale is mix it into our favorite breakfast smoothie. We mix the kale with some almond milk, blue berries, bananas or a fruit of your choice, ice, and its not only delicious, but very healthy. We have also been on a 7 day juicing diet and kale was one of the vegetables we used because it is definitely a nutritional powerhouse. And we not only lost weight but felt energetic after our 7 day juicing diet.
